Ingredients

  • 1 pack (400g) fresh Aegean anchovy fillets TRATA on Ice
  • 2 eggs
  • 200 g all purpose flour
  • 200 g sesame seeds

For serving

  • Green salad
  • Olive oil
  • Lemon
  • Salt and pepper

Method

Let the fillets come up to room temperature. Line a baking sheet with parchment paper and preheat the oven to 160ºC. Crack the eggs into a mixing bowl and whisk. Place the flour in another bowl and the sesame seeds in a third bowl. Toss each fillet in the flour and shake off excess, dip in egg then coat with sesame. Lay the fillets on the baking sheet and bake them for about 25 minutes until golden brown.
