ROASTED SARDINES WITH OREGANO AND GROATS

Ingredients

  • 1 frozen pack of Aegean sardine fillets TRATA on ice (400g.)
  • 2 tomatoes, sliced
  • 50 g. small black raisins
  • 5 g. dried oregano
  • 30 g. olive oil

For the groats

  • 200 g. groats
  • 200 g. boiling water
  • 50 g. lemon juice
  • 50 g. olive oil
  • 1 onion, finely chopped
  • 3 g. carry
  • 3 g. cinamon

Method

Let the fillets reach room temperature, then pat them dry with paper towels. Preheat the oven to 180ºC. In a baking sheet arrange half of the tomato slices in a single layer, place half of the sardine fillets on top, add the raisins, and layer the remaining tomatoes and sardines. Sprinkle with oregano, drizzle with olive oil and bake for approximately 20 minutes until fork tender.

Prepare the groats. Place the groats in a bowl, cover with boiling water and let soak for 20 minutes. Drain, if there is any water left. Let cool. Add the lemon juice, olive oil, onion, carry and cinamon and mix to combine. Add coriander or fresh herbs. Serve the groats placing the sardines on top.
