ROASTED ANCHOVIES WITH SAMPHIRE

Ingredients

  • 1 frozen pack of anchovy fillets TRATA on ice (400 gr)
  • 20 g. olive oil
  • 10 g. smoked paprika
  • 5 g. cumin
  • 5 g. curry

For the mayonnaise

  • 100 g. mayonnaise
  • 100 g. Greek yogurt
  • Fresh dill

Method

Let the fish reach room temperature, then pat them dry with paper towels. Preheat the oven to 180ºC. Whisk the olive oil, paprika, cumin and curry in a bowl. Put the anchovies in the mixture and toss to coat. Line a baking sheet with parchment paper and lay the fillets without touching one another. Roast for approximately 15 minutes until the anchovies are golden brown and crispy. Prepare the mayonnaise by mixing all ingredients together. Toast the bread. Spread mayonnaise at each slice, lay on the anchovies, samphire and sprinkle with dill.
