FISH & CHIPS: CRUNCHY ANCHOVIES WITH CHIPS

Ingredients

  • 1 pack of freshly frozen Trata on ice anchovy fillets (400g)
  • 100 g all-purpose flour (Type 405)
  • 100 g maize flour
  • 5 g garlic powder
  • 5 g dried coriander
  • 400 g vegetable oil for frying

For the mayonnaise

  • 200 g mayonnaise
  • Grated zest of 1 lemon
  • 1 tsp smoked paprika

Method

Leave the anchovy fillets to come to room temperature. Wipe well with kitchen paper. Mix the flours, garlic powder and coriander in a bowl. Coat the anchovies with this mixture and place the fillets on a tray covered with kitchen paper. When you have coated all the anchovies with the flour, put them into the fridge for twenty minutes.

Pour the vegetable oil into a wide frying pan and heat to a high temperature. Place the anchovies carefully into the oil. The oil should completely cover the fillets. Turn using a fork. The anchovies are ready when they are golden brown. Remove from the oil and leave on a serving plate covered in kitchen paper until time to serve. Prepare the mayonnaise by mixing all ingredients. Serve with chips with mayonnaise on the side.
