ANCHOVIES WITH SPRING ONIONS, GARLIC AND ROSEMARY

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 100g olive oil
  • 50g butter
  • 100g spring onions
  • 1 clove of garlic
  • 100g white wine
  • 4 springs of rosemary
  • Salt and pepper

For serving

  • 1 lemon, sliced
  • Crushed red pepper

Method

Let the fillets reach room temperature. In a frying pan, heat the oil and butter until the butter is foaming. Add the spring onions and garlic, season with salt and cook over low heat till the spring onions are soft. Add the anchovies, pour wine and let cook over low heat until the wine is reduced, the anchovies are soft and you have a nice reduction sauce. Serve the anchovies with fresh lemon juice and crushed red pepper.
