Anchovies With Lemon and White Been Hummus

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 4tbsp olive oil
  • Juice form 1 lemon
  • 1tsp dried oregano
  • Salt and pepper

For the white bean hummus

  • 200g white beans, cooked
  • 50g whole grain tahini
  • Juice from 1 lemon
  • 50g olive oil
  • 1 clove of garlic
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180oC. Place the fillets in a baking sheet, add olive oil, lemon and oregano, season with salt and pepper and bake the anchovies for 15′ or until cooked through.
Prepare the hummus. Place the tahini, olive oil and lemon juice into a food processor and blend. Add the garlic and the cooked beans, little by little and blend until smooth and creamy. You can add extra tahini, lemon, salt and pepper, olive oil or little cold water depending on your taste. Serve the hummus placing the fillets on top and pita breads, horse radishes, cappers and fresh herbs on the side.
