Aegean Sea Anchovies and Vegetable in Parchment Paper

Ingredients

  • 1 pack (400g) fresh frozen Aegean Sea anchovy fillets TRATA ON ICE
  • 4 zucchini, sliced
  • 4 peppers, chopped
  • 200g peas
  • 20 cherry tomatoes
  • 4 spring onions, thinly sliced
  • Juice from 1 lemon
  • 2 tbsp olive oil
  • Dried oregano
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180oC. Cut four sheets of parchment paper. In a large mixing bowl combine the zucchini, peppers, peas, cherry tomatoes, spring onions, lemon juice, olive oil, oregano, salt and pepper. Divide the vegetables among the sheets, mounding them in the centre. Place the packets on a baking sheet, sealed sides up, and bake for about 20′ until the parchment is puffed and browned and the vegetables are tender. Serve hot.
