Zucchini salad and tuna salad with lentils and quinoa

Ingredients

  • 2 pouches tuna salad with lentils and quinoa Salad Pocket Trata
  • 1 tbsp mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 4 zucchini (400g)
  • 2 spring onions, chopped
  • •Fresh herbs

For serving

  • 100g smoked almonds

Method

In a bowl, whisk together the mustard, vinegar, olive oil until you have a thick sauce. Use a vegetable peeler to slice zucchini into thin ribbons and place them in a bowl. Add the spring onion, herbs, the tuna salad with lentils and quinoa, add the sauce, almonds and serve.
