Zucchini rolls with smoked tuna

Ingredients

  • 1 pack (2 tins) smoked tuna TRATA
  • 4 medium zucchini
  • 100g mozzarella, grated
  • 1 cup fresh herbs, finely chopped

For serving

  • Green salad
  • Cherry tomatoes

Method

Open the tins, drain out the oil and save it for cooking. Use a vegetable peeler to cut the zucchini into thin ribbons You will need three ribbons strips for each roll (that is, 36 ribbons for the four servings). Place the remaining zucchini pieces in a food processor and pulse. Transfer the shredded zucchini in a bowl, add the tuna, mozzarella, herbs and mix.

 

Prepare the rolls. Lay the zucchini ribbons down flat next to each other. Spoon mixture and roll up. Place the rolls next to each other in a baking pan, drizzle with the tuna oil,

 

For baking

  • 50g mozzarella, grated
