Zucchini patties with smoked tuna piquant

  • 1 pack (2 tins) smoked tuna piquant TRATA
  • 1kg (4 pcs) large zucchini
  • 1 dry onion, finely chopped
  • 4 spring onions, finely chopped
  • 2 cups herbs, finely chopped (mint, parsley, dill)
  • 2 eggs
  • Salt
  • 1 cup rusk crumbs

For serving

  • 4 tbsp yogurt
  • 2 tbsp mayonnaise
  • 4-5 pickled cucumbers, chopped
  • Green salad

Method

Start by preparing the zucchini patties. Shred the zucchini on the large holes of a box grater. Place them in a colander, season with salt and set aside for a few minutes so juices can be released. Then, wrap in a clean kitchen towel and squeeze out as much liquid as you can. If the zucchini is too moist, the fritters will be soggy.

In a bowl, place the zucchini, onion, spring onions, herbs, eggs and rusk crumbs and combine. Open the tin, drain out the liquid, and add the tuna in the bowl. Knead the mixture, take a small amount and form one thin patty. Fry and taste the patty. If necessary, adjust the flavor as per your taste preferences.

Once the mixture is to our liking, form into thin patties and coat with flour. Fill a deep frying pan (or a saucepan) with olive oil and heat to 170ºC. Fry the patties until golden brown, about 2 minutes per side. Transfer to a large plate lined with paper towels to soak up any excess oil.

Prepare the cucumber sauce. In a bowl, combine the yogurt, mayonnaise, pickled cucumbers and mix. Serve the zucchini patties with green salad and the yogurt sauce on the side.
