Bean, Chickpea and Corn Salad with Smoked Tuna

Ingredients

  • 1 pouch smoked tuna TunaPocket TRATA
  • 2 tbsp lemon juice
  • 50g kidney beans, cooked
  • 50g chickpeas, cooked
  • 50g corn kernels, cooked
  • 1 spring onion, thinly sliced
  • Fresh herbs, finely chopped

For the dressing

  • 1 tbsp yogurt
  • 1 tbsp sun-dried tomato paste
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil

Method

In a mixing bowl, whisk the yogurt, sun-dried tomato paste, vinegar and olive oil. Add the beans, chickpeas, corn, spring onion, fresh herbs, and toss. Top with tuna, drizzle with lemon juice and serve.
