Tuna Salad With Quinoa and Roast Pumpkin

Ingredients

  • 1 pack (2 tins) tuna salad with quinoa and smoked tuna TRATA
  • 2 spring onions, finely sliced
  • 4 horse radishes, chopped
  • 1 cup pomegranate seeds
  • Fresh herbs

For the pumpkin

  • 400g pumpkin, sliced
  • 2tbsp olive oil
  • 2 cloves of garlic, chopped
  • Salt and pepper

Method

Preheat the oven to 180oC. Place the pumpkin slices in a large mixing bowl, add the olive oil and garlic, season with salt and pepper, and toss. Bake for 20′ or until the pumpkin slices are soft. In another bowl mix the contents of the two tins, onions, horse radishes, pomegranate seeds, and fresh herbs. Add the pumpkin slices, toss and serve.
