Tuna salad with lentils, smoked tuna and curry

Ingredients

  • • 1 pack (2 tins) tuna salad with lentils and smoked tuna TRATA
  • • 3 tbsp coconut oil (or other vegetable oil)
  • • 1 onion, finely chopped
  • • 2 cloves of garlic, finely chopped
  • • 2 carrots, diced
  • • Salt
  • • A little fresh ginger, grated
  • • 3 tbsp red curry paste
  • • 250g grated tomatoes
  • • 600g vegetable stock
  • • 150g lentils, cooked
  • • 150g coconut milk

Method

In a saucepan, add the coconut oil, onion, garlic, carrots, ginger, salt and cook over medium heat for about ten minutes. Add the curry paste and cook for two minutes while stirring. Add the tomatoes, vegetable stock, lentils and cook for about 10 minutes.

Prepare the rice. Place it in a colander and rinse under running water. Transfer the rice to a bowl, fill with water (to cover it), leave for 10 minutes and drain. Fill a saucepan with water (370g), add the rice and bring to the boil. Reduce heat, cover with a lid, and let simmer for 12 minutes (without opening the lid). When the time is up, remove from the heat and set aside for a further 12 minutes.

When the curry is ready, add the coconut oil and stir. Divide the rice and curry among plates. Add the tuna salad with lentils and smoked tuna, sprinkle with herbs and serve.

• 370g water
