Tuna salad Mexicana with brown rice and mint sauce

Ingredients

  • 1 pack (2 tins) of tuna salad Mexicana TRATA
  • Salt
  • 1 small cucumber, diced
  • 5 pickled cucumbers, thinly sliced
  • 2 green peppers, diced
  • 1/2 tsp red pepper flakes
  • 1 medium onion, finely chopped
  • 20 cherry tomatoes cut in half
  • 1 cup herbs, chopped
  • 2 cups mayonnaise
  • 300g brown rice, cooked
  • 2 cups of lettuce, shredded

For serving

  • Lettuce leaves
  • Tortilla chips

Method

In a bowl, combine the tuna salad Mexicana, rice, cucumber, pickled cucumbers, red pepper flakes, onion, green peppers, shredded lettuce, mayonnaise, yoghurt and mix. Fill the lettuce leaves with the tuna salad and serve with the chips on the side.
