Spicy Sardine Salad

  • • 4 tins sardines piquants Trata
  • • 2 spring onions, thinly sliced
  • • Fresh herbs
  • • 4 tbsp strained yogurt
  • • 2 tbsp mayonnaise
  • • 200g roasted aubergine purée
  • • 100g corn kernels, cooked

For serving

  • Toasted bread

Method

Open the tins and drain out the liquid. In a bowl, put the sardines and broke them up into large pieces with a fork. Add the spring onions, herbs, yogurt, mayonnaise, aubergine purée, corn kernels and stir gently. Serve the sardine salad with toasted bread.
