SMOKED TUNA MEATBALLS

Ingredients

  • 2 cans smoked tuna TRATA
  • 200g stale bread
  • 2 spring onions
  • 100g instant mashed potatoes
  • 1 egg
  • 200g flour for dusting
  • Salt and pepper

For the salad

  • 2 tbs red wine vinegar
  • 4 tbs tuna oil
  • Salt and pepper
  • 200g green salad
  • 1 cucumber, peeled into ribbons
  • 10 horse radishes, sliced

Method

Preheat the oven to 180ºC. Open the cans of tuna and save the oil. Cut the crust off the bread and dice the inner bread into large cubes. Soak them in water and drain well, squeezing moisture from bread with your heads.

In a large mixing bowl place the bread, onion, instant mashed potatoes, the egg, tuna and little tuna oil and mix by hand to incorporate ingredients. Add little more instant mashed potatoes, if needed. Season with salt and pepper and mix again. Refrigerate until firm. Form the mixture into evenly sized balls. Bake the tuna meatballs for 15 minutes. Alternatively you can fry the meatballs at 170ºC.

Prepare the salad. In a large bowl add vinegar, tuna oil, salt and pepper and whisk to combine. Add the green salad, cucumber, horse radishes and toss to cover. Prepare the mayonnaise. Place all ingredients in a bowl and whisk to combine. Divide the salad into plates, place the meatballs on top and serve.
