SARDINES WITH COUSCOUS

Ingredients

  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA ON ICE
  • 3 cloves of garlic
  • 1 tbs mustard
  • 2 tbs olive oil
  • 1 tsp paprika
  • 1 tsp dries oregano
  • 1 tsp dried onion
  • Salt and pepper

For the couscous

  • 200g couscous
  • 200g hot water
  • The juice of one lemon
  • 30g olive oil
  • 1 tbs sesame seeds
  • A little curry (powder)
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 170ºC. Line a baking sheet with parchment paper. In a food processor place the garlic, mustard, olive oil, paprika, oregano, dried onion and process until smooth and creamy. Dip the sardines in the mixture and lay them over the parchment paper. Bake for approximately 17 minutes or until golden brown. Meanwhile prepare the couscous. Place the couscous in a bowl and pour the hot water. It will be ready in a few minutes. Add the lemon juice, olive oil, sesame seeds, curry and mix to combine.Divide the couscous among four plates and top each with the sardine fillets. Sprinkle with herbs, lay over the lemon slices and serve.
