SARDINES IN THE OVEN WITH THYME AND OAT GROATS SALAD

Ingredients

  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA on Ice
  • 10 springs of thyme
  • 50 g olive oil
  • Salt and pepper

For the oat groats salad

  • 200 g oat groats, cooked
  • Juice from 1 lemon
  • 30 g olive oil
  • Fresh dill
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 160ºC. In a baking sheet pour a little olive oil and sprinkle with thyme. Lay the sardines over, pour again a little olive oil, spinkle with thyme and season with salt and pepper. Bake for approximately 25 minutes until fork tender. Prepare the oat groats salad. Place the oat groats in a bowl add the lemon juice, olive oil, dill, salt and pepper and mix to combine. Serve the salad on four plates. When the sardines are ready, take them off the oven and lay them over the oat groats.

Tip! Cook the oat groats according to package instructions. You can also use couscous or legumes such as lentils.
