SARDINES IN PARCHMENT PAPER WITH ROSEMARY AND BELL PEPPERS

Ingredients

  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA on Ice
  • 400g bell peppers in various colours
  • 2 cloves of garlic
  • 2 springs of rosemary
  • 50g olive oil
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180ºC. Lay a long piece of parchment paper on a large baking pan and place the sardines. Cut the peppers in thick slices and place them on the sardines. Add the garlic, rosemary, olive oil, season with salt and pepper and toss well. Fold the parchment paper over and crimp the edges together to create a tight seal. Bake for about 25 minutes.
