SARDINES BAKED WITH WHITE WINE

Ingredients

  • 1 pack of freshly frozen Trata on ice sardine fillets (400g)
  • 2 large red onions
  • 30 g white wine
  • 1 lemon, sliced
  • 100 g cherry tomatoes
  • 30 g olive oil
  • 1 tsp dried oregano
  • Fresh basil to serve

Method

Preheat the oven to 180°C. Wash and dry the tomatoes. Peel the onion and slice. Line a small oven dish with the sliced onion. Remove the sardine fillets from the freezer and the packaging without defrosting. Pour the wine over the onions and add the sliced lemon and fillets. Bake for about 20 minutes. The sardines should be crunchy outside but remain juicy inside.

Add the whole cherry tomatoes, the oregano and olive oil and return to the oven for another 5 minutes. When the sardines are ready, remove the dish from the oven and allow to stand for a few minutes. Cut into portions and serve topped with fresh basil.
