ROASTED ANCHOVIES WITH MUSTARD SAUCE AND POTATOES

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 400g potatoes cut in small pieces
  • 2 cloves of garlic, chopped
  • 1 tbsp mustard
  • 3 tbsp olive oil
  • Juice from 1 lemon
  • Dried oregano
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180ºC. Spread the potatoes in a single layer on a baking pan. I a food processor add the garlic, mustard, olive oil and lemon juice and blend until smooth. Add dried oregano, salt and pepper, pour over the potatoes and toss to coat. Roast for approximately 20′ until fork tender. When the potatoes are ready add the anchovies, toss gently and let cook for about 15 minutes.
