Roasted Anchovies and Fava (Yellow Split Peas Purée)

Ingredients

  • 1 pack (400g) fresh frozen Aegean Sea anchovy fillets TRATA ON ICE
  • 2 tbsp olive oil
  • Juice from 1 lemon
  • A little oregano

For the fava

  • 250g yellow split peas
  • 1lt water
  • 1 large-sized onion, diced
  • 2 tbsp olive oil
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180oC.Wash the yellow split peas until the water runs clear. Place them in a pot, pour in the water, olive oil, and season with salt. Stir, bring to a boil, and let cook over medium heat, until peas are soft. Drain, reserving about 1 cup of the cooking water. Season the fava with salt and set aside to cool. Transfer the fava to a food processor. You can leave it a bit chunky or process until completely smooth. Roast the anchovies. Lay the fillets on a baking sheet, drizzle with olive oil and lemon juice, sprinkle with oregano, and roast for 15′ until fork tender. Divide the fava in plates and place the anchovies on top. Sprinkle with dill, drizzle with olive oil and lemon juice.
