POTATO SALAD WITH PIQUANT ANCHOVIES

Ingredients

  • 2 cans Aegean sea anchovies piquant TRATA
  • 400g small-sized potatoes, cooked and cut in half
  • 2 spring onions (green parts included)
  • 100g gherkins, sliced
  • 2 tbs parsley, chopped
  • 2 tbs dill, chopped

For the sauce

  • 1 tbs mustard
  • The juice from one lemon
  • 4 tbs mayoannaise
  • Salt and freshly ground pepper

Method

Prepare the sauce. Place the mustard, lemon juice, mayonnaise, salt and pepper in a bowl and whisk. Prepare the potato salad. Place the potatoes, spring onions, onion, herbs and gherkins in a bowl. Add the dressing and toss carefully. Divide the potato salad among for plates, lay the piquant anchovies on top and serve.
