Pasta with spring vegetables and smoked tuna

Ingredients

  • 1 pack (2 tins) smoked tuna TRATA
  • 300g short pasta
  • 2 zucchini, cut in pieces
  • 1 cup peas
  • 1 cup fresh herbs
  • 2 spring onions, finely chopped
  • Salt and pepper
  • 800g vegetable stock, hot

Method

Open the tins of tuna and save the oil for the cooking. In a deep pot add the tuna oil, pasta, zucchini, peas, herbs, onions, salt, pepper, vegetable stock, cover with the lid and cook for about 20 minutes or until the pasta is soft. All the stock should be absorbed and the pasta should be tender with a creamy consistency. (If not, simmer uncovered for a little longer). Stir and serve.
