Pasta with spicy sardines

Ingredients

  • 2 tins sardines piquant
  • 1 medium onion, finely chopped
  • 3 tbsp olive oil
  • 500g spaghetti
  • Salt and pepper
  • Zest of one lemon

For serving

  • 1 cup croutons
  • 1 cup parsley, finely chopped

Method

Open the tins and drain out the liquid. In a frying pan, put the onion, olive oil, the sardines, and fry over high heat until the onion softens. After ten minutes turn off the heat and add the lemon zest. Cook the pasta in boiling salted water. When the pasta is ready, drain it, transfer to the frying pan with the sardines, and toss. Divide the pasta among four plates, add croutons, parsley and serve.
