PASTA WITH MUSHROOMS AND SMOKED TUNA

  • 2 cans of TRATA smoked tuna
  • 1 pack (500g) pasta of your choice
  • 200g white mushrooms
  • 1 red pepper
  • 1 yellow pepper
  • 4 spring onions
  • 1 clove of garlic
  • 1 sprig of rosemary
  • Salt and pepper

Method

Open the tuna cans and save the oil for cooking. Rub the mushrooms with a towel, remove the stem and peel the skin off. Cut into thin slices. Wash and dice the peppers. Peel and chop the spring onions and garlic. Cook the pasta according to package directions, in salted boiling water.

Poor the tuna oil in a deep pan and add the mushrooms. Season with salt and sauté until mushrooms soften. Then add the peppers, spring onions and garlic and cook over medium heat until all ingredients soften. When ready add the whole sprig of rosemary. After the pasta is ready remove the pot from the heat and drain it. Using tongs, transfer the pasta to the pan. Toss and serve placing the smoked tuna on top.
