PASTA SALAD WITH ROCKET PESTO AND SMOKED TUNA

Ingredients

  • 2 cans of TRATA smoked tuna
  • 1 pack (500g) whole grain rigatoni, cooked
  • 1 tbsp olive oil
  • 100g almonds
  • A bunch of rocket (100g)
  • 1 clove of garlic
  • 1 tbsp red wine vinegar
  • Salt and pepper

For serving

  • Rocket leaves
  • Lemon juice

Method

Bring a large pot of salted water to a boil and cook the rigatoni. When ready drain and drizzle with olive oil. Open the cans of tuna and save the oil for the pesto. Heat a sauté pan or skillet on medium-high heat. Spread almonds in single layer and toast until golden-brown. Chop the almonds into pieces. Wash, pat rocket dry and place it in a food processor. Add the tuna oil, vinegar, salt and pepper and process until you have a smooth pesto sauce.

For serving you will need four 750ml jars. Divide the pesto among the jars, add the rigatoni and almonds. Squeeze over some lemon juice and garnish with rocket leaves. Place the smoked tuna on top and serve.
