Oven-fried Sardines with Piquant Mayonnaise

Ingredients

  • 1 pack (400g) fresh frozen Aegean sea sardine fillets TRATA ON ICE
  • Salt and pepper
  • 200g all-purpose flour
  • Olive oil

For the mayonnaise

  • 4 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 small-sized onion, finely chopped
  • 1 tsp smoked paprika
  • Red pepper flakes

Method

Let the fillets come up to room temperature. Preheat the oven to 180ºC. Line a baking sheet with parchment paper. In a bowl mix the flour, salt and pepper. Toss each fillet in the flour and shake off excess. Lay sardines on paper in a single layer without overlapping. Roast for about 15′ until fork tender.

Prepare the mayonnaise. Combine the mayonnaise, yogurt, paprika, red pepper flakes and onion in a mixing bowl. When the anchovies are ready divide them among plates, spoon some mayonnaise on the side and serve with salad.
