Orzo with roasted eggplants and smoked tuna piquant

Ingredients

  • 1 pack (2 tins) smoked tuna piquant TRATA
  • 2 eggplants (400g), diced
  • 200g cherry tomatoes
  • 2 cloves of garlic
  • Salt and pepper
  • Fresh basil
  • 300g orzo
  • 700g vegetable stock, hot

  • Fresh herbs

Method

Open the tins, and add the tuna along with its oil to a baking pan. Add the eggplants, cherry tomatoes, garlic, salt, pepper, basil, and bake in a preheated oven for 20 minutes until the vegetables are soft. Add the orzo and vegetable stock, cover with aluminum foil, and bake for twenty more minutes or until the orzo is ready. Add the herbs, mix, and serve.
