Niçoise Summer Salad with Sardines

Ingredients

  • 2 cans Aegean Sea sardines in olive oil TRATA
  • 200g cherry tomatoes cut in half
  • 200g potatoes boiled and cut in half
  • 1 cup green beans, boiled
  • 4 peppers in strings, roasted
  • 4 hard-boiled eggs
  • Fresh herbs
  • Salt and pepper
  • Juice from 1 lemon
  • 2 tbsp olive oil

Method

Open the cans and drain well the sardines. On a large plate arrange the cherry tomatoes, potatoes, green beans, peppers, and eggs. Season with salt and pepper, and sprinkle with herbs. Whisk together lemon juice and olive oil, and drizzle the dressing over salad. Place the sardines on the side and serve.
