MEDITERRANEAN ANCHOVIES IN A SPICY CRUST

Ingredients

  • 1 package of Trata on Ice frozen fresh Aegean anchovy fillets (400 gr)
  • 1 clove of garlic, finely chopped
  • 30 gr olive oil
  • 30 gr tomato paste
  • 10 gr cumin
  • 10 gr smoked paprika
  • 10 gr mustard seeds
  • 50 gr flour
  • 30 gr water
  • 200 gr all-purpose flour (for frying)
  • 200 gr oil for frying
  • Fresh rocket (arugula)
  • Juice of 1 lemon

Method

Place the garlic, olive oil, tomato paste, cumin, smoked paprika, mustard seeds, flour, and water in a bowl and mix until a firm paste forms. Dry the Mediterranean anchovy fillets and place them in the spiced paste. Let the fish fillets marinate in the refrigerator for at least one hour. Pour the oil into a skillet and heat to a high temperature. Place the fish fillets in the skillet gradually, in turns. Fry them for three minutes on each side. Serve the anchovy fillets on top of rocket (arugula) leaves with a little lemon juice.
