Lemon potatoes with smoked tuna

Ingredients

  • 1 pack (2 tins) smoked tuna TRATA
  • 2 tbsp mustard
  • Juice of two lemons
  • Salt and pepper
  • Oregano
  • 1 tsp smoked paprika
  • 300g baby potatoes, cut in half
  • 500g vegetable stock, hot
  • Rosemary
  • 200g cherry tomatoes

Method

Open the tins, drain the oil out and into a baking pan. Add the mustard, lemon juice, salt, pepper, oregano, paprika and mix. Add the potatoes, vegetable stock, a little rosemary and bake in a preheated oven for about 20 minutes or until the potatoes are soft. There should be little liquid left. Add the cherry tomatoes, tuna and bake for ten more minutes.
