Lemon orzo with zucchini, rocket leaves, and smoked tuna

Ingredients

  • 1 pack (2 tins) smoked tuna TRATA
  • 1 large onion, finely chopped
  • 1 clove of garlic
  • Salt and pepper
  • 2 zuccini, finely sliced
  • 200g peas
  • 300g orzo
  • 1 litre hot water
  • 1 cup parmesan cheese, grated

Method

Open the tins and save the tuna oil. In a large frying pan, add the onion, garlic, the tuna oil, salt and pepper and cook over medium heat, lid on, until the onion is soft and sweet. Then, add the zucchini and peas, cover with the lid and let cook for about 10 minutes, until the vegetables are soft. When ready, add the orzo and set the timer to 20 minutes. Add the hot water, and let simmer over medium heat lid on. When the time is up, the orzo shall be cooked. Add the parmesan and stir. Divide among the dishes, place the  tuna and rocket leaves on top, drizzle with fresh lemon juice, and serve.
