HERB CRUSTED ANCHOVIES

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovyn fillets TRATA ON ICE
  • 100g butter
  • 1 clove of garlic
  • The zest of one lemon
  • 6 tbs rusk crumbs
  • A few basil leaves

For serving

  • 2 zucchinis
  • 1 tbs olive oil
  • A few lemon drops
  • Fresh herbs
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 170ºC. Line a baking sheet with parchment paper. In a food processor, place the butter, garlic, lemon zest, rusk crumbs, basil leaves and process until the mixture resembles breadcrumbs. Lay the anchony fillets over the parchment paper. Spread the mixture over the top of the fillers and bake for about 15 minutes until the anchovies are roasted and form a crispy crust.

Prepare the sald for serving. Slice the zucchinis and drizzle with olive oil and lemon juice. Season with salt and pepper and set aside.When the fillets are ready, divide the zucchinis in four plates, sprinkle with fresh herbs, lay the fillets on top and serve.
