Crunchy Tuna Wrap

  • 1 pack (2 tins) smoked tuna
  • 4 tbsp mayonnaise
  • 1 tbsp mustard
  • 1 medium onion, finely chopped
  • 1 cup corn kernels, cooked
  • 200g tortilla chips
  • 1 cup mozzarella, grated
  • 4 large tortillas
  • 4 small tortillas

  • Green salad

Method

In a bowl, combine the tuna, mayonnaise, mustard, onion, corn, tortilla chips and mix. Arrange the large tortillas on work surface; spread 1/4 of the mixture on each tortilla, leaving small border at either end; drizzle little grated mozzarella, place the smaller tortillas on top and tightly fold edges of large tortillas toward the center, creating pleats. Heat a non-stick frying pan (without adding cooking fat), place the tortilla seam-side down, and cook, flipping once, until tortilla is golden, about 5 minutes per side. You can also bake the tortillas in the oven, at 200oC for about 15 minutes or in the toaster. Cut in half and serve with green salad on the side.
