  • 2 cans of TRATA Smoked Piquant Tuna
  • 300g (2 1/2 cups) chickpeas, cooked
  • 1 cup rusk crumbs
  • 1 cup parsley, chopped
  • 1 medium-sized onion, grated
  • 1/2 tsp curry
  • 1/2 tsp paprika
  • Salt and pepper

For baking/frying

  • 2 cups rusk crumbs

Method

Open the tuna cans and save the oil. Process the chickpeas in a food processor until thay are chopped. Don’t process into paste. In a mixing bowl place the chickpeas, tuna oil, rusk crumbs, parsley, onion, curry, paprika, salt and pepper and combine. Refrigerate until firm. Form the chickpea mixture into small slider-sized patties. Coat with rusk crumbs and bake in a preheatead oven at 180ºC, for about 20 minutes. You can also fry the patties in vegetable oil at 160ºC.

Prepare the tahini sauce. Place all the ingredients in a bowl and mix well until smooth and creamy. Place the chickpea patties on salad leaves and serve with tahini sauce and pickled onions.

For the tahini sauce

2 tbs whole grain tahini (sesame paste)

Juice of 1 lemon

1 tbs cold water
