Carob penne pasta with roasted carrot and salmon sauce

Ingredients

  • 4 pouches smoked salmon, SalmonPocket TRATA
  • 1 medium onion, finely chopped
  • 6 carrots (400g), grated
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • Salt
  • 2 large tomatoes (350g), grated
  • 200g cream cheese
  • 350g carob penne pasta

For serving

  • Fresh herbs

Method

In a frying pan, add the onion, carrots, garlic, olive oil, season with salt and cook over medium heat for about 15 minutes until they are soft. Place the vegetables in a food processor and blend until smooth, add the grated tomatoes and mix.

Cook the pasta in boiling salted water according to the package instructions. When ready, drain them, add the carrot sauce, and toss. Add the cream cheese, herbs, salmon and serve.
