Bucatini pasta with caramelized onions, red wine and smoked tuna

  • 1 pack (2 tins) smoked tuna Trata
  • 1 pack bucatini pasta
  • 1kg white onions
  • 4 tbsp olive oil
  • Salt and pepper
  • 100g red wine
  • 1 tbsp tomato paste
  • 50g almonds, coarsely chopped
  • 100g parsley, finely chopped

Method

Open the tins of tuna and save the oil for cooking. Place the onions, olive oil, salt and pepper in a saucepan, cover with a lid and let cook over a medium heat for about 40 minutes, until the onions are soft. It is important not to open the lid during cooking. When the onions are soft, add the tuna oil, red wine, tomato paste and cook for another 20 minutes without covering with the lid until the onions have no more liquid.

 

At the same time, cook the pasta following the instructions on the package. When the pasta is ready, drain and transfer to the pot with the onions. Add the almonds, parsley, tuna, mix and serve.
