Bruschetta with tarama salad and octopus piquant

  • 2 packs octopus piquant, TRATA
  • 1 large onion, finely chopped
  • 120g white tarama (fish roe)
  • Juice of one lemon
  • 200g crustless white bread, soaked in water and drained well
  • 200g sunflower oil

For serving

  • Sliced bread
  • Fresh herbs

Method

Chop the onion in the food processor. Transfer to a strainer, press with a spoon to drain well. Place the tarama and lemon juice, in the working bowl of the food processor and pulse for 2-3 minutes. Gradually add the olive oil, bread, and pulse until the ingredients are combined. Toast the bread, spread the tarama salad, and divide the octopus. Add the herbs and serve.
