Baked orzo with spicy smoked tuna and roasted vegetable sauce

Ingredients

  • 1 pack (2 tins) spicy smoked tuna Trata
  • 1 onion, finely chopped
  • 4-5 cloves of garlic
  • 200g cherry tomatoes
  • 2 peppers, diced
  • 1 aubergine, finely chopped
  • 2 courgettes, thinly sliced
  • Salt and pepper
  • 250g barley boiled for 5 minutes
  • 100g mozzarella cheese, grated

Method

Preheat the oven at 250°C. Open the tins and pour the liquid into a baking tray. Add the onion, garlic, cherry tomatoes, peppers, eggplant, zucchini, season with salt and pepper and bake for 20 minutes, until the vegetables are tender. Run half of the vegetables through a food processor to puree. Pour the sauce in the pot you used to cook them, add the orzo, mozzarella and tuna, stir and serve.
