ANCHOVY FILLETS WITH ROASTED GARLIC

Ingredients

  • 1 pack (400 g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 100 g garlic, thinly sliced
  • 100 g olive oil
  • Juice from 1 lemon
  • Salt and pepper

For the mayonnaise

  • 100 g mayonnaise
  • 100 g Greek yogurt

Method

Let the fillets reach room temperature. Preheat the oven to 180ºC. Lightly grease a baking sheet with olive oil and preheat it in the oven while it heats up. When it gets hot, pull the baking sheet out of the oven, take the frozen anchovy fillets out of their package and lay them on the pan. Drizzle with the remaining oil and scatter garlic slices on top. Season and let them cook for about 20 minutes until the anchovies are tender and the garlic is crispy. Prepare the mayonnaise. In a food processor, add the mayonnaise, yogurt and 4 pieces of the garlic that you have cooked with the anchovies and process until creamy. Serve the anchovies with the mayonnaise and rocket leaves on the side.
