ANCHOVIES WITH OREGANO ON MASHED POTATOES WITH LEMON

Ingredients

  • 1 pack (400g) fresh Aegean anchovy fillets TRATA ON ICE
  • 1 tsp dried oregano
  • 4 tbsp olive oil
  • 1 lemon
  • Salt and pepper

For the mashed potatoes

  • 800g potatoes
  • 4 tbsp olive oil
  • Juice from 1 lemon
  • Salt and pepper

Method

Let the fillets come up to room temperature. Preheat the oven to 180ºC. Lay the anchovies on a baking sheet, drizzle with olive oil, add lemon juice, oregano, season with salt and pepper and roast for 15′ or until the anchovies are tender.

Prepare the mashed potatoes. Bring a large pot of salted water to a boil. Add the potatoes (skin-on) and cook until tender. When ready remove skins and mash potatoes using a potato masher or a fork. Add olive oil, lemon juice, salt and pepper and mash to incorporate.

When the anchovies are ready remove from the oven. Divide the mashed potatoes into portions, place the anchovies on top and sprinkle with herbs.
