ANCHOVIES WITH CANDIED ONIONS AND MUSHROOMS

Ingredients

  • 1 package of Trata on Ice fresh frozen anchovy fillets (400 gr)
  • 400 gr onions, cut in large pieces
  • 400 gr fresh mushrooms
  • 2 cloves of garlic, finely chopped
  • 20 gr olive oil
  • 20 gr butter
  • 30 gr white wine
  • 50 gr fresh dill weed
  • Salt and pepper

Method

Let the fish fillets thaw to room temperature. Let them dry well before cooking them. Use paper towels to clean the mushrooms and cut them into large pieces, just like the onions. Place the oil and butter in a deep frying pan and once the butter has melted, add the onions and garlic. Add salt and cook at a low temperature until the onions become clear in color and sweet. This will take approximately 10 minutes. Add the mushrooms, pour in the wine, and then spread out the fish fillets in the frying pan. Cover with a lid and simmer at a low temperature for a few minutes. Serve with fresh herbs.
