Anchovies in the oven with white wine and potatoes

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 400g potatoes cut into small pieces
  • 2 cloves of garlic, chopped
  • 1 tbsp mustard
  • 3 tbsp olive oil
  • 100g white wine
  • Dried oregano
  • Salt and pepper
  • 1 large tomato, sliced

For serving

  • Fresh herbs, chopped

Method

Let the fillets come up to room temperature. Preheat the oven to 180°C. Spread the potatoes in a single layer on a baking pan. Whisk the olive oil, wine, mustard and garlic. Add oregano, salt and pepper. Pour the mixture over the potatoes and toss to coat. Roast for about 20′ or until fork-tender. When ready add the anchovies, toss slightly and lay over the tomato slices. Roast for 15′, sprinkle with fresh herbs and serve.
