TOMATO SALAD WITH CAROB RUSKS AND SMOKED TUNA

Ingredients

  • 2 packs (160 g) smoked tuna TRATA
  • 40 g red wine vinegar
  • 400 g ripe tomatoes
  • 200 g cucumber
  • 1 red onion
  • 200 g carob rusks
  • Fresh thyme
  • Salt and pepper

Method

Open the cans of tuna and save the oil to make the salad dressing. Whisk together vinegar and tuna oil in a bowl until dressing is emulsified and smooth. Wash and slice the tomatoes. Wash and cut the cucumber into thin slices. If needed, the seeds can easily be removed from a cucumber if it is cut legthwise and the tip of a spoon is used to gently scoop out the seeds. Thinly slice the onion. Place all the vegetables in a salad bowl, add the dressing and thyme and toss well. Add the smoked tuna, break up the rusks into small pieces and serve.

Tip! Add the rusks to the salad last, to maintain their crunchy texture.
