SPAGHETTI WITH SPINACH PESTO AND SMOKED TUNA

  • 2 cans of TRATA smoked tuna
  • 1 pack (500g) whole grain spaghetti
  • 100g walnuts
  • 500g fresh spinach
  • 1 clove of garlic
  • 1 tbs red wine vinegar
  • 2 anchovies
  • Salt and pepper

Method

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Open the can of tuna and save the oil to make the pesto. Heat a sauté pan or skillet on medium-high heat. Spread walnuts in single layer and cook, strirring frequently, until they start to brown and smell toasted. Pulverize walnuts in a food processor. Empty the pulverized walnuts from the processor into a bowl. Wash spinach and pat dry carefully to take all moisture away. Place spinach, tuna oil, vinegar, salt, pepper and garlic in the food processor and process until you have a smooth pesto sauce. Transfer the pesto to a bowl and stir in the pulverized walnuts. When the spaghetti is done, drain and toss with the pesto. Serve placing the smoked tuna on top.
