ROASTED SARDINES WITH MUSTARD SAUCE

Ingredients

  • 1 pack (400g) fresh frozen Aegean sardine fillets TRATA ON ICE
  • 400g potatoes diced
  • 2 cloves of garlic
  • 200g mustard
  • 100g white wine
  • 50g olive oil
  • 50g lemon juice
  • Dried oregano
  • Salt and pepper

For serving

  • Fresh rocket

Method

Let the fillets reach room temperature, then pat them dry with paper towels. Preheat the oven to 200ºC.  Place the potatoes in a baking sheet. In a food processor add the garlic, mustard, white wine, olive oil and lemon juice and blend until smooth. Add dried oregano, salt and pepper, pour over the potatoes and toss to coat. Roast for approximately 20 minutes until fork tender. When the potatoes are ready add the sardines, toss gently and let cook for about 12 minutes. Serve the sardines with potatoes and rocket leaves.
