ROASTED ANCHOVIES WITH OLIVE OIL AND OREGANO

Ingredients

  • 1 pack (400g) fresh frozen Aegean anchovy fillets TRATA ON ICE
  • 1 large onion, sliced
  • 2 spring onions, thinly sliced
  • 4 cloves of garlic, sliced
  • 4 tbs vinegar
  • 1 tsp dried oregano
  • Salt and pepper
  • 4 tbs olive oil

For serving

  • Parsley, chopped
  • Green salad leaves

Method

Let the fillets come up to room temperature. Preheat the oven to 160°C. In a mixing bowl add the onion, spring onions, garlic, vinegar, oregano, salt and pepper and stir. Then add the anchovies and toss. Place all ingredients in a baking pan and roast for about 17 minutes or until the anchovies are tender. Sprinkle with parsley and serve with green salad on the side.
