PASTA SALAD WITH SMOKED TUNA AND VEGETABLES

Ingredients

  • 2 cans of TRATA smoked tuna
  • 250 g fusilli, cooked
  • 10 cherry tomatoes cut in quarters
  • 1 spring onion, chopped
  • ½ green bell pepper
  • ½ yellow bell peppers
  • 30 g baby rocket leaves

For the dressing

  • Tuna oil
  • 50 ml olive oil
  • 4 tbs orange and lemon white balsamic cream
  • 1 lime, juice and zest
  • Salt
  • Freshly ground pepper

Method

Dice the peppers with a sharp knife on a cutting board and place them in a bowl. Add the fusilli, cherry tomatoes and spring onion. Open the tuna cans and drain the oil into another bowl. Add the tuna into the bowl with the fusilli. Add the ingredients for the dressing into the bowl with the tuna oil. Add the orange and lemon white balsamic cream, lime juice, olive oil, salt and freshly ground pepper and whisk until smooth and creamy. Pour the dressing over the pasta salad and toss to evenly coat. Add the baby rocket leaves, toss again and serve.
