CABBAGE WITH ORZO AND SMOKED TUNA

Ingredients

  • 2 packs (160g) smoked tuna TRATA
  • 1 large-sized onion, thinly sliced
  • 1 clove of garlic
  • Salt and pepper
  • Half white cabbage, shredded
  • 2 carrots, thinly sliced
  • 300 gr orzo
  • 1 lt hot water

For serving

  • Juice form 1 lemon

Method

Open the tuna cans and save the oil. Put onion, garlic, the tuna oil, salt and pepper in a large skillet over medium heat. Cover the skillet with a lid and cook for a few minutes until the onions are transclucent and soft. When ready add the cabbage and carrot, cover with the lid and let cook for 10 minutes until vegetables get soft. When ready add orzo and set a timer for 20 minutes. Pour in 1/3 of hot water and let the orzo absorb it completely. Add the rest of hot water in two doses stirring almost constantly. At 20 minutes the orzo should be soft all the way through. Serve in dishes, place the tuna on top and drizzle with fresh lemon juice.
